뭐가 어떻든 다 좋은데, 아이스커피(iced coffee)는 왜 뜨거운 커피보다 비싸게 받는 건가(charge more than hot coffee). 얼음 덩어리들(lumps of ice) 들어가고 하면 그만큼 커피 원액(undiluted solution of coffee beans)도 적게 들어갈 테니 오히려 더 싸야 하지 않을까.
우선 커피 농축액이 일반 뜨거운 커피보다 약 두 배 필요하다(require about twice the amount of concentrated coffee than normal hot coffee). 얼음이 녹아 물에 희석되는 것을 감안해(take into account the watering down due to melting ice cubes) 온전한 맛을 유지해야(keep the integrity of flavor) 하기 때문이다.
게다가 아이스커피에는 종이컵보다 비싼 투명 플라스틱 컵(more expensive clear-plastic cup)을 사용한다. 플라스틱컵 비용이 종이컵의 두 배가량 든다(cost about twice as much as the paper cup). 얼음 만드는 제빙기도 임차하거나(rent an ice machine) 사야 한다.
빨대 값도 만만치 않다(cost a fair bit of money). 뜨거운 커피와 달리 아이스커피는 대부분 빨대로 마시기(drink it through a straw) 때문이다. 업주 입장에선 뜨거운 커피에는 들지 않는 추가 비용을 부담해야(shoulder the extra cost) 하는 것이다.
그보다 더한 것이 있다(there is more to it). 냅킨이다. 추가 비용(additional expense)에서 큰 비중을 차지한다. 고객들이 더 많은 냅킨을 사용하는 탓이다. 차가운 컵 표면에 생기는 물방울을 닦아내기 위해(in a bid to wipe down the condensation on the surface of cold plastic cup) 냅킨을 한 움큼씩 집어간다(take away a handful of napkins). 그래서 아이스커피가 많이 팔리는 여름철에는 종이 비용이 20%까지 늘어난다.
미국에선 커피숍이 번창하려면(for a coffee shop to thrive) 인건비 포함한(include personnel expense) 제조원가를 메뉴판 가격의 약 28% 선에 맞춰야(keep the cost-of-goods around 28 percent of menu price) 한다고 한다. 거꾸로 말하면 70%가량이 남는다는 얘기다.
